Ingredients / china king menu
For the Base / china king menu
- 1 cup white
- 10 cups water or stock
- 1/2 teaspoon
Optional Protein Additions:
- Chicken breast or thigh (shredded)
- Fish slices (marinate in ginger and soy sauce)
- Pork slices (marinate in soy sauce and cornstarch)
- Century eggs or salted eggs (chopped)
Toppings and Garnishes:
- Chopped green onions
- Julienned ginger
- Soy sauce or sesame oil
- Crispy fried shallots or garlic
- Coriander leaves
- Pickled vegetables
- Ground white pepper
Instructions
- Prepare the Rice
- Stain the rice in cold water until the water turns clear. This removes extra starch and stops clumping.
- Cooking the Congee Base
- In a large pot, combine the rinsed rice with water or stock. Bring to a boil over high heat.
- Cut the heat to low and boil. Stir irregularly to stop the rice after sticking to the lowest.
- Simmer Until Creamy
- Let the congee cook for about 1–1.5 hours, or until the rice breaks down and the mixture reaches a porridge-like consistency.
- If the congee becomes too thick, add more water or stock to adjust the consistency.
- Add Proteins (Optional)
- If using chicken, fish, or pork, add them to the congee during the last 10–15 minutes of cooking. Stir well to ensure even cooking.
- Seasoning
- Add salt and a splash of soy sauce or sesame oil for flavor.
- Serving
- Ladle the congee into bowls and top with your choice of garnishes like green onions, ginger, crispy shallots, or pickled vegetables.
Tips for Variations
- Vegetarian Congee: Use vegetable stock and add mushrooms, tofu, or vegetables like carrots and corn.
- Quick Congee: Use leftover rice instead of raw rice; this reduces cooking time to 20–30 minutes.
