Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional but adds depth)

  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar (or white vinegar)

  • 1 tsp cornstarch (for thickening)
  • 2–3 tbsp water

  • 300g fresh egg noodles (or dried noodles, cooked as per package instructions)
  • 2 tbsp vegetable oil (or any neutral oil)
  • 2 garlic cloves (minced)
  • 1-inch ginger (minced)
  • 1 medium onion (thinly sliced)
  • 1 cup cabbage (shredded)
  • 1 medium carrot (julienned or thinly sliced)
  • 1 bell pepper (sliced into thin strips)
  • 1 cup bean sprouts (optional)
  • 200g protein of choice

Instructions

Step 1: Prepare the Sauce

  1. In a small bowl, beat together soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, sugar, cornstarch, and water.
  2. Set aside.

Step 2: Cook the Noodles

  1. If using dried noodles, boil them as per package instructions until just tender. Drain and throw with a tiny oil to stop sticking.

Step 3: Stir-Fry the Protein

  1. Heat 1 tbsp oil in a large wok or skillet over medium-high heat.
  2. Add your protein and cook until browned and cooked through. Remove from the wok and set aside.

Step 4: Stir-Fry the Vegetables

  1. In the same wok, add another 1 tbsp oil.
  2. Sauté garlic and ginger for 30 seconds until aromatic.
  3. Add onion, cabbage, carrot, and bell pepper. Fry for 2–3 minutes until the vegetables are proper crispy
  4. Add the bean sprouts and cook for another 1 minute.

Step 5: Combine and Toss

  1. Return the cooked protein to the wok.
  2. Add the cooked noodles and tip in the paste.
  3. Toss everything together over high heat for 2–3 minutes until well combined and heated through.

Step 6: Garnish and Serve

  • Serve hot, garnished with chopped spring onions, sesame seeds, or a drizzle of chili oil, if desired.
