Ingredients

- 1 tsp ginger, minced
- 1-2 green onions, sliced diagonally

Instructions
1. Prepare the Chicken
- In a bowl, mix chicken pieces with the beaten egg, salt, and white pepper.
- Dredge each piece in cornstarch, ensuring they’re well-coated.
- Heat oil in a deep pan or wok. Deep fry the chicken in groups until golden and crispy. Trench on a rope frame or paper towel.
2. Make the Sauce
- In a bowl, mix soy sauces, rice vinegar, sugar, hoisin sauce, oyster sauce, and chicken stock.
- Stir in the cornstarch slurry and set aside.
3. Cook the Stir-fry
- Heat 2 tablespoons of oil in a wok over medium-high heat.
- Add dried chilies, garlic, and ginger. Stir-fry for 30 seconds until aromatic.
- Empty in the paste mixture and take to a simmer, inspiring until it thickens.
4. Combine and Serve
- Add the fried chicken to the wok and mix to coat equally with the sauce.
- Add green onions and mixing for a few seconds.
