Here’s a complete recipe for making wontons (云吞 – Yún Tūn), a classic Chinese dish that can be boiled or fried. This recipe includes both the filling and the wonton wrappers, as well as instructions for cooking them in soup or serving them fried.

For Wonton Wrappers (makes about 40 wrappers)
- 2 cups (250g) all-purpose flour
- ½ teaspoon salt
- 1 large egg
- ½ cup (120ml) water (adjust as needed)
- Cornstarch (for dusting)

For Filling:
- 200g (7oz) ground pork (or chicken/shrimp)
- 2 green onions, finely chopped
- 1 teaspoon ginger, minced
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- ½ teaspoon sugar
- 1 teaspoon cornstarch
- ½ teaspoon white pepper (optional)
- Salt, to taste

For Soup (optional):
- 4 cups (1 liter) chicken stock
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- A handful of bok choy or spinach
- Green onions, chopped, for garnish

Instructions
1. Make the Wonton Wrappers:
- In a bowl, mix flour and salt.
- Add the egg and water gradually, mixing until the dough comes together.
- Knead the dough on a floured surface for 8–10 minutes until smooth.
- Cover with a damp cloth and let rest for 30 minutes.
- Roll the dough into a thin sheet (as thin as possible).
- Cut into 3×3 inch squares. Dust with cornstarch to prevent sticking.
2. Prepare the Filling:
- Combine all filling ingredients in a bowl.
- Mix thoroughly until well combined.
3. Assemble the Wontons:
- Place a small teaspoon of filling in the center of a wonton wrapper.
- Moisten the edges with water, fold diagonally to form a triangle, and press to seal.
- Bring the two bottom corners together, overlapping slightly, and press to seal.
- Repeat with remaining wrappers and filling.
4. Cook the Wontons:
- For Boiled Wontons in Soup:
- Bring a pot of water to a boil.
- Add wontons and cook for 4–5 minutes or until they float to the top.
- In another pot, heat chicken stock and season with soy sauce and sesame oil.
- Add cooked wontons and bok choy or spinach.
- Garnish with green onions and serve.
- For Fried Wontons:
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Fry wontons in batches for 3–4 minutes or until golden brown.
- Drain on paper towels and serve with sweet chili sauce or soy sauce for dipping.
Tips:
- You can store uncooked wontons in the freezer. Place them on a tray to freeze individually before transferring them to a freezer bag.
- Feel free to customize the filling with chopped mushrooms, water chestnuts, or finely diced vegetables.
